In QuickBooks Online you can not change the customer currency once it has been set up.You would need to create a new customer in sales>customer>new customer and in the section this customer pays with me with select EUR.If you are not going to use the GBP customer you can make that customer inactive by going to the customer and selecting edit you will get the customer information box,it is just a case of hitting on make inactive.
