In "Banking" section, my transactions are automatically organized by "Payee." Before, it used to be by "Date." How do I get it to be automatically organized by "Date"?

You may have clicked the PAYEE column on the banking window. That could be the reason why it's sorted out by payee.

To fix this, you just need to click the DATE column to organize it by date. Here's a sample screenshot:
