How do I change the currency on my account to £ instead of $

The option to change the currency in QuickBooks Self-Employed is currently unavailable. This feature is possible in all Desktop versions and on some Online plans. 

You can change the currency by manually converting the amount before recording it. You'll also want to integrate third-party applications that can help you use multiple currencies.
