Suddenly I can't enter a payee into new check as it disappears after I click to another line

It's possible that you're experiencing a browser-related issue. We can perform troubleshooting steps to fix it. 

You can clear cache to boost the web page. Some stored data on your browser can impact the data being transmitted, that's the reason as to why it's showing some unusual behavior.

• Safari for Mac

You can also use other supported up-to-date browsers as an alternative when accessing QuickBooks.

Once you've successfully created the check with the payee, you can check this article in case you want to print the check.
