Question

When adding an expense the category no longer auto populates. This just started happening, I don't know if i accidentally hit something.

Do you use default expense accounts?  If so, check that your particular payee has this set up.  Otherwise, the platform does not know how to auto-populate the category.  It's possible that a new payee was added without all the details.
