I'm currently using the trial version of Quickbooks online Essential. When I create a new item I cannot enter the cost of the item. How do I enter the cost of the item?

In QB only inventory items, which are only in QBO+, hold value

Cost of an item is what you pay for it.  When you use an item, non inventory or service, on a purchase the cost immediately posts to the account selected on the item screen
