Can you add two employees to payroll for July 14th on the 13th and then add the last one on either date when I have the information?

Welcome to Community!  It's important that you're able to set up your new employees in QuickBooks Online Payroll, to ensure accurate calculations on the associated payroll forms.  I'd be happy to provide some insight here!

You can absolutely enter the employee hire date as soon as the information is available.  This saves valuable time when you're ready to pay your staff.  Here's a helpful guide for your reference.
