How do I create a pay cheque to reimburse a Shareholder for EI previously deducted.This needs to correctly adjust her T4 and the PD7A for the next remittance period

Creating a cheque is easy in QB Online. To do this, click New (+) > Cheque > enter info in the fields. I understand you'd like this cheque to correctly adjust your shareholder's T4 and the PD7A for the next remittance. To make sure you record the cheque correctly, I highly recommend reaching out to an accountant.
