Why, on the Profit and Loss displayed by products/services, aren't the payroll/wages separated by prod/svc, even though we use the prod/svc in the timesheet?

The program handles these details separately, which is why you don't see the payroll wages grouped by product and service on the Profit and Loss report.

I suspect you may be using a product other than QuickBooks Online, however, or an app that syncs with the program since the built-in timesheet options don't include the capability to add a product or service to the form. That would be done at the invoicing stage.
