Would wish to the procedure of changing Tracking date one selected when creating an inventory item?

Are you trying to change the starting date of your inventory? If so, yes, we can edit it. Let's go to your Opening Balance Equity account and update it from there. 

1. Go to the Accounting menu and select Chart of Accounts.
2. Search the Opening Balance Equity account and click View Register.
3. Locate the starting value of that inventory. Select it to expand the view and tap Edit.
4. From the Inventory Starting Value page, change the As of date. Tap Save and close.
