I'm happy to share why you can't see, or in this case, edit the quantity of an inventory item.

When you are a user with limits to customers and suppliers, you can't add or adjust the quantity, even when adding the item upon recording a purchase. This is why it's disabled on your end, like in the screenshot below. However, the quantity you enter on purchase transactions will definitely affect it.

I suggest checking the article about user roles and access rights, specifically the Standard user role access rights section to know what you can and can't do with your permission. You can also check out the video tutorials about suppliers and expenses for your additional reference.
