How do I change the date of a cheque which has already been issued? Do I have to delete the check and recreate it?

If the check has already been printed and sent to the recipient the check date in your system and the physical document won't match, but if you don't care about that you could change it.  If it's still within the same accounting period, it won't make much difference since it'll still apply to the same month.
