Reviewing uploaded receipts, out of no where the details started asking for tax amount and automatically adding the tax amount to the total. Is there a setting for this?

It's important that all your transactions are entered correctly for your books to be well balanced. QuickBooks Online is a great tool able to keep track of your expenses s you can see the profit of your business. I can provide some information about receipts. 

Receipts entered using the camera function in the mobile app or other means imported through the receipts function should have the amount you enter inclusive of tax, and then you can adjust the tax amount as well. This modification would just remove from the expense itself, and not add more tax to the total of the transaction. If tax is being added to the total when entering receipts, I recommend reaching out to the QuickBooks Online support team outside of the Community. They'll be able to assist to make sure your receipts have the correct total. You can reach them using these steps:
