Is it possible to add stock in one unit of measurement & sell it in some other unit and still track the quantity of inventory? like : buying in Kgs and selling in packs

Afaik, there is no U/M feature in QB Online. Consider using an inventory managment app and integrate it with your QBO. You may start exploring from these options
