Are we still able to add Products/ Services and Qty on Hand on the Simple Start or Essential plans?

We’re considering downgrading our account but want to check and make sure that we won’t lose any necessary functionality in doing so and whether we perhaps need to stay on our current plan.
Primarily we use QuickBooks for creating invoices for our customers and keeping track of our inventory and quantities on hand. I see that ‘Track your inventory’ is listed as a function that will be lost if we downgrade so I suspect we may need to stay on our Plus plan, however I just wanted to confirm my understanding.
Am I correct in thinking that if we downgrade to the Essentials or Simple Start plans we will no longer be able to add Products/ Services and quantities whatsoever? If anyone could clarify exactly to what extent this may be affected by the downgrade it would be greatly appreciated.
