Can I freeze a client that has stopped trading and we need to keep the records (without changing) for 6 years, not paying a monthly fee.

Welcome to the QuickBooks Community! At this time, we do not have that option. However, you can cancel the subscription and still have access to all the information for a year. However, you would need to back up the data if you need it longer than that.
