Yes, you can switch back to multi-user mode while waiting for the file from the accountant. 

Switching between single-user and multi-user mode in QuickBooks Desktop does not impact the creation and sharing of an accountant's copy. As long as other users aren't changing the data that can conflict with your accountant's changes, then you can definitely switch back to multi-user mode.
