Can I make the default option in invoicing that payment is not available by paypal?

You can follow the steps below if you want to remove the PayPal payment option in your invoices. 

1. Go to the Apps option from the left menu. 
2. Look for Accept payments with PayPal and click the drop down arrow. 
3. Select Disconnect. 

Though, if this is just temporary, you can remove the check mark on the box for Online payments instead. 

1. Click the Gear icon. 
2. Select Custom Form Style. 
3. Click Edit on the form you're using for the invoice. 
4. Go to Payments tab. 
5. Remove the check mark for Online payment.
