I edit my outstanding invoices on the pc but it doesn’t update on my iPhone.

Hello michaelgroves83-, thanks for reaching out to Quickbooks support on the Community page, Whatever information is entered into with the phone or PC should automatically update into the other for you. Can you try refreshing the app or fully uninstalling it and reinstalling it, it should then show you all the data that has been entered.
