I want to use an estimate form as an Application 4 Payment. Can I remove the default ending to the email - it refers to "estimate", also remove the word estimate from PDF

You can create a new default estimate template for this by following the steps below:

1) Select the Cog > Custom form styles 

2) New style > Estimate

3) Content > Click into header > Form > Change form name in 'Estimate' field

4) Emails > Edit subject line

5) Click 'Done' to save when finished editing

6) To make default, select the drop-down beside the template > Make default
