So is the resolution of this issue that it is not possible to edit an invoice that has been copied from an estimate?

I'm here to help provide some information about editing an invoice that you copy from the estimate.
When you copy an invoice from an estimate, you can edit it if the Progress Invoicing is Off. Otherwise, you cannot make any changes.
To turn On/Off the Progress Invoicing, follow these steps below:
- Go to the Gear ⚙ icon and select the Account and Settings.
- Click the Sales tab.
- In the Progress Invoicing section, then hit the Pencil icon ✎.
- Click the button to turn it On/Off.
- Choose Update.
- Select Save, then Done.
