How do I tell this software that I do not want VAT as I am not registered?

You can set the default tax rate selection to Out of Scope of Tax or No VAT from the Account and Settings. 

Let me show you how:

1. Click the Gear icon and select Accounts and Settings.
2. Choose Advanced tab and go to Accounting.
3. Click the drop-down for Default tax rate selection and choose Out of Scope of Tax (or No VAT).
4. Select Save and then Done.
