In banking categorising sales putting vat rate in does it calculate the amount and automatically store it somewhere for paying VAT quarterly?

Yes it does automatically calculate the amount for you and it does put it somewhere for you, it will put it in the vat control account this is where all the VAT amounts go to before they are filed.
