Does anyone know what I can do? My accountant has disappeared and I am the master admin but on HER QB account. How can I transfer the account to me and add in my cc, etc?

No worries, you can change your payment method for your subscription since you are the Master Admin. I'll show you how to do that.

1. Log in as a Master Admin of your QuickBooks Online company.
2. Go to Settings ⚙ and select Account and Settings.
3. Choose Billing and Subscription from the left pane.
4. Click the Edit or Pencil icon in your Payment method.
5. Enter your updated card information.
6. Once done click Confirm card or Save.

Make sure that the address you have entered is the same as the one in your credit card statement. You can also follow the steps provided by @Soundarya India to remove your accountant's access to your company files.

In regards with your second concern, if you meant about changing your Intuit account associated with your QBO company, I suggest contacting QBO Customer Care team.
