If i give my accountant access to quickbooks does he/she have access to see and do anything?

They have everything the master admin has, plus some things the master admin doesn't including the ability to a) undo reconciliations and b) batch reclassify

What @Malcolm Ziman said is accurate, your accountant will be able to do everything a master admin can as well as more.

Will they be able to see sensitive/confidential information ex. social security numbers of my employees, bank account numbers, bday, addresses etc.?

I'd like to know also if they can see user/admin information (if they have all master control then im assuming yes?) & QB does allow for 2 accountant users, so can the accountants see the other accountants info?
