Can I change the text in the description category in banking tab? Ex. It says "Friday's" but it's actually a reimbursement to a person for an event called First Friday?

Yes, you can change the category of the downloaded transactions. Before doing so, I'd recommend reaching out to your accountant so they can guide record them without messing up your account.
