How do I change pay period date to Jan. of 2023

You can't. As I understand QuickBooks Online, you have to create payroll in date order. Once you create a current payroll you can't go back.

This is yet another way that QuickBooks Desktop is better than QuickBooks Online. Using Desktop you can create paychecks in any order you want. Not a problem at all.
