How do I enter a paycheck from August that wasn't recorded? Quickbooks tells me to choose a more recent paydate.

We'll need help from the QBO Payroll Support to be able to add your paycheck information in the previous quarter, specifically in August. They have the tools to do this on their end. Please follow the steps to contact them below.
