I would like to track the amount of inventory I have in each of my vans separately along with how much inventory I have in the shop and have it all add up to a single value.

You need to have a 3rd party inventory management app with multi warehouse feature.

I can share some information about tracking inventory, @pinyonmesadoors-

The option to track inventory items or products per location is currently unavailable. You can only assign a location for your transactions like invoices and bills. This option is available in QuickBooks Online Plus and QuickBooks Online Advanced. You can turn on this feature from the Account and settings and then add a location from the All Lists section. More information can be found in the following article: Set up and use location tracking in QuickBooks Online.

You may consider using a class to track your inventory items. This feature is available in QuickBooks Online Plus and QuickBooks Online Advanced. Create a class for the items in your van and a separate one for your shop. However, you can only assign one class per inventory item. Then add this to your inventory items. Refer to the following article for more information about adding a class: Create and manage classes in QuickBooks Online

From here, you can generate a Sales by Class Summary report to see your total sales by class. Check this article for detailed guidance: Run reports by class in QuickBooks Online
