We're delighted to have you here in the Community, drbgibb. I'll share some steps to help you create paper checks for the submitted.

If you haven't submitted payroll yet, we can create regular paychecks for the employee. To begin:

  1. From the left menu bar, go to Payroll and select Employees.
  2. Tap Run Payroll and choose your desired payroll schedule, then click Continue.
  3. Review the QuickBooks Bank account to track your payroll, the Pay period, and the Pay date.
  4. Select the employees you'd like to pay.
  5. Enter hours, compensation, memos, or any other necessary paycheck info. Then, click Preview payroll.
  6. Click on Preview payroll details or Submit payroll.
  7. Once done, select Finish payroll.

Additionally, if you want to do paper checks for the late hours and haven't submitted them before your scheduled payroll, let's create an unscheduled paycheck.

Here's how:

  1. Go to the  Payroll menu and select Employees.
  2. Select the ▼ dropdown, and select one of the following options: Bonus only, Commission only, or Fringe benefits only.
  3. Choose As net pay or As gross pay.
  4. Enter any info about taxes or paycheck calculations.
  5. Review the QuickBooks bank account to track your payroll, the pay period and the pay date.
  6. Select the employees you'd like to pay and enter hours, compensation, memos, or any other paycheck info as necessary.
  7. Tap Preview payroll and select Preview payroll detailsSave for later, or Submit payroll.
  8. Confirm the amounts and payment methods and click Finish Payroll.

Moreover, I've added this link to guide you on how to enter your employee’s year-to-date paycheck info: Add pay history to QuickBooks Online Payroll. It also contains details on how you can review all the paychecks you've processed for your employees.

Keep us posted if you require additional assistance with payroll checks in QBO. We'd be glad to have you back in this forum. Take care, and have a good day!
