1 of my employees is asking if he can be paid 3 weeks upfront over xmas rather than weekly. Can I change his pay schedule for 1 month only then make him back to weekly?

I wouldn't go changing pay schedules for this, What you can do is when running payroll for the employee, do it as weekly but add an additional pay (the three weeks upfront) then the next pay runs do it so that he is paid nothing until you have caught up then run payroll as normal after that.
