Is it possible to change the recipient on an invoice without clearing all the items? I've made an invoice out to a builder instead of the developer a year ago

There's a high probability that the invoice you want to modify is a billable transaction. If you attempt to change the customer name, all associated transactions will be deleted. I recommend changing the expense or bill transactions first before changing the invoice. You can follow these steps on how:

1. Go to your Suppliers, then click the name of the vendor that has the billable. 
2. Under Customer, change the name to your developer. 
3. Hit Save and Close.

After updating the billable expense for your developer, you can now edit the name on the invoice. Here's how:

1. Go to the Invoice.
2. Click the invoice you want to modify.
3. Change the customer name to your developer. 
4. You will be asked if you are sure to modify the transaction, then click Yes.
5. Hit Save and Close.
