QB sent a quote to a customer at 5:15am today. Our computer was off. QB changed the date of the quote to the 01.10.19 from the 25.08.19. Our customer advised us. WTF ??

Thank you for bringing this to our attention. 

There is no functionality in QuickBooks for Quotes to automatically be sent to a customer. This functionality is available for invoices. 

Quotes are also not emailed nor data are changed unless it manually manipulated. It is possible however for other users who have access to your file to manipulate this.
