Can I limit my accountant user from deleting/editing/voiding an entry ?

An accountant user is automatically given an Admin-type of access. This means that your accountant will have access to all of the features available in your version of QBO. Here's an article about this for more details: Managing Accountant Users in QuickBooks Online. 

I'd suggest sending a feature request or feedback about getting more options when inviting an accountant. Here's how:

1. Go to the Gear icon and select Feedback. 
2. Enter your request or feedback.
3. Click Next to submit.
