The Audit Log is exactly the place to find deleted transactions, Kitkatbc! Recreating them will not be a problem.

What specific transactions are you trying to recreate from the Audit Log? While we're at it, I can give you a simple example as to what you need to do of the details you've found in the Audit Log. For example, we're recreating an invoice. Here's how you can do it:

  1. In the Audit Log, take note of the details of the invoice such as:
    • Invoice and Due dates
    • Terms and Customer name
    • Billing and shipping addresses
    • Affected items and their associated amounts
  2. Click + New button in the upper-left corner.
  3. Select Invoice.
  4. Enter the details that you've noted for the Audit Log.
  5. Save the changes.

Recreating the transactions is the same way as you've created them the first time. You can review this article to know more about the use of Audit Log: Use the audit log in QuickBooks Online.

Moreover, you can pull up and customise reports once you've reentered all the necessary transactions.

Let us know if there's a specific transaction you want to recreate. We'll guide you through it.
