Some accounts in the chart of accounts are defaulted and can't be modified, stcc.

Kindly specify which account you want to indicate as Cost of Goods Sold. Have you encountered any error messages while trying to edit it?

When you set up your company in QuickBooks Online (QBO), the system generates default accounts in your chart of accounts based on the business entity you've chosen. Special accounts also appear when activating certain features or taking specific actions in your QuickBooks settings.

If you need more information on this topic, refer to this article: Manage default and special accounts in your QuickBooks Online chart of accounts.

Moreover, please note to save changes by clicking on the Save button when updating an account.

I also recommend performing some troubleshooting steps to determine if the problem is related to the browser. Sometimes, the system behaves strangely due to the stored internet cache files. Begin by changing the name using an incognito window or private browser using the following keyboard shortcuts:

  • Safari: Command + Shift + N
  • Google Chrome: CTRL + Shift + N
  • Mozilla Firefox or Microsoft Edge: CTRL + Sh

If you're able to do so, return to your regular browser and clear your browsing history to start afresh. If not, you can use a different supported browser. The QuickBooks version you're currently using may have a temporary issue.

You can also run reports in QuickBooks Online to track the financial status of your business.

You can also create subaccounts in your chart of accounts in the system. This helps you keep your chart of accounts organized and complete more precise reports.

Should you require further clarification about managing the chart of accounts within the program, I'm always here to provide information. Keep me updated by responding below. Have a good one.
