How to generate a P&L that shows total only for salary expense?

Normally that's all you see. It sounds like somehow you have sub-accounts for the salary that use employee's names. That's unlikely to be a good idea. Instead, use one payroll expense account for all the employee salaries and then you won't see this unwanted detail.
