If I'm texting an invoice why do I need an email address?

The email address is used to track the transaction easily, MEXP. I can elaborate on the reasons below.

 

Since the text invoice feature is currently only available for payments-enabled users, the email required is for your Merchant account. The URL from the Share link you sent to your customer contains this information.
