At the moment, the option to archive projects in QuickBooks Online is unavailable. You may consider exporting them to Excel for documentation and future use.
Here’s how:
Select the Projects menu from your left navigation pane.
Click the customer or project
Choose the information you need to keep.
Select the Export to Excel button.

Archiving projects in QuickBooks is a fantastic idea that will significantly benefit our customers. The option to archive projects in QuickBooks Online is still unavailable. I'd suggest sending feedback to our product engineers. This allows them to review your suggestion and include it in future updates.
Here's how:
Go to the Gear icon on the upper right side.
Select Feedback.
Type your comments in the box and click Next.
