Is there a way to sort an invoice before it's sent in order of its 'service date' from oldest to newest, and by 'product/service' alphabetically?

The current system requires you to choose between sorting an invoice of the line items by service date or by product/service name to ensure a smooth process. If you sort by service date, the product/service names will not be in alphabetical order. Conversely, if you sort the product/service names alphabetically, the service dates will be in a different order.

Furthermore, you can use reports to see your sales and inventory status. You can run total sales for Sales by Product/Service Summary report or a Sales by Product/Service Detail report. You can also customize the reports only to see specific transactions or columns.
