I'm pretty sure the only way to do this within Quickbooks Desktop is to enter the names last name first as you enter them. So in the first name field you would put Jones, and in the last name field you would put Sally H. In QBO you have the option to view the names differently using the 'Display name as' field. Just hit the drop down arrow after you enter the client name and choose the last name first option.
I see this is your first question so let me take the time to welcome you here to the Intuit Community. Allow me to chime in for a moment and share some additional information about sorting your customers' names in QuickBooks Online (QBO).
The option to sort your customers' names according to their last name is unavailable at this time. However, as mentioned by @SouthernStacy, you can change their profile so it will show as the last name first as a workaround. Here's how:
1. Go to the Sales menu, then Customer tab. 2. Select the customer, then click the Edit button on the customer's profile. 3. Make sure to fill out the First and Last Name fields. 4. On the Display name as drop-down, select the option which starts with their last name. then click Save.

I wish there was too! It is very frustrating. Thankfully I haven't added all of my customers in, this is a new business, I will just have to know to do it when I enter a new customer. I hope this gets fixed soon!
Having programming and database experience myself, I just want to add that it's very disappointing that this high demand request is taking so long to implement in Quickbooks. This is standard in every industry and virtually every software that involves lists names or accounts with names, and it does not take much work at all to implement something that will just automatically convert it this way in real time. That this has not been done in years is a very disappointing indictment of the professionalism and competency of the Quickbooks online developers. This realistically should not take more than a few lines of code to make this possible and a skilled dev could have it ready by tomorrow. This should have been a minimum basic option that was included at launch. Please hire some new devs or contractors that will finish the basic standard features MOST customers want and will use before going further with more advanced things catered to a small niche market that won't improve the experience of most users.
Thank you for at least providing a work around, though the extra time it will take to manually update hundreds of customers and manually update every single new customer is crazy for something that is expected as a default selection everywhere else.

It's almost 3 years after the OP asked about this feature... Has this been implemented? If not, please add it soon!! I have nearly 3000 customers that I need to change the display name on and can't spend days editing the records one-by-one :(
