The option to pay by credit card is showing up even though I have it 'turned off' as an option

Yes, it'll show the option even tho it isn't on. When you enable Quickbooks Payment, the credit card option is set by default. At the moment, there isn't a way to disable it. This is the reason why it still appears when you create an invoice.

As a workaround, you can uncheck the credit card payment as you process the invoice so it will no longer appear.
