If the transaction is completed immediately or via a sales receipt, you as the QuickBooks user will be the one who asks whether your customer wants to add a tip. You can then manually add any amount from the actual invoice total.

 

If the entry or invoice is done manually and sent to the customer, they can add a tip to the transaction when they pay it. This often displays on the Payment amount screen. I've included a screenshot below for visual reference.
