If I snap last years receipts will they show up for the previous year or the current year?

To give you an idea, the receipt capture feature in QuickBooks will capture the detail of the transaction. This also means that it will review the date displayed on the captured transaction and will record it in the system as it is. See this sample receipt and the date:
