My quickbooks desktop is all outta whack. Can i just create a new company and then input all of our info such as vendors, custoemrs, payroll starting from jan 2020? If so, will i still be able to access our old company file?

I run a market research company and I just started recently using quickbooks to help better manage our finances and pay our hundreds of research participants. We write hundreds of checks and as they are cashed, I'd like the transaction to be automatically added to the bill and the related check. The rules feature in QBO is rather limited as it doesn't provide many fields for me to 'zone in' on the right bill. I believe this is the right type of workflow for tracking expenses but there may be a better way or any other form of expense tracking for our business.
unable to update company details
Two days ago, I uploaded Accountant's changes; not sure what happened, but entire QB somehow duplicated many entries; when I tried to back them out, including payroll entries, sales tax and account transfers, I still could not get my QB back to where it was. Is there a way to "undo" all transactions from a point back 2 days? And if not, is there a way to find out if any changes were made after "removing accountant restrictions" that may indicate something else may have happened?
I went into Items List (in Multi-User mode) and went to add "Custom Fields" and it said I had to be in "Single User Mode" to add these custom fields. I went into Single User mode, added my custom fields, and everything worked fine. When I went back to multi-user mode, all my custom fields disappeared! In fact, it never even showed that I had these "Custom Fields" up! It was saying no "Custom Fields" were assigned. When I go back to "Single User Mode" all my custom fields reappear!! Why can't I get these custom fields to work in multi-user mode?

What is an RGT file, and can I delete it without causing problems
I am helping a business move over to QBO (currently using excel). Their year end is August 31 so we are moving everything from September 1 and on, over to quickbooks. I have setup opening balances for every account except for Retained Earnings. How do I enter an opening balance for Retained Earnings without having to enter all revenue and expenses for every year since the beginning of time (business has been active for 10+years)?
HiI have deposited an amount of $1000 using the business credit card to order a new truck for my business. After few months, the order got canceled and the car dealer returned the deposited amount of $1000 as a cheque which I have deposited in the chequing account.Now, I'm confused on how to record those 2 transactions. When I pay my employees, the payee all has the same name so when I go to the expenses, it shows the same name getting paid different amounts. I have double checked with my employees and they are all getting paid so that is good but I want to correct my books so that it shows me in the expenses who got paid what amount. If you know how to fix this please let me know. Thank you!
